This simple and cheap recipe for Tennessee-style BBQ Pulled Pork Spaghetti is the perfect way to make leftover pulled pork into a crowd-pleasing family dinner!
Prep: 10 minutes
Cook: 40 minutes
Total: 50 minutes
Recipe Makes: 4
Approximate Cost: $4

Ingredients

  • 2 tablespoons olive oil
  • ½ small onion (chopped)
  • 1 green bell pepper (chopped)
  • 5 cloves garlic (minced)
  • 3 tablespoons BBQ rub
  • 14 ounce can diced tomatoes (undrained)
  • 14 oz can tomato sauce
  • 1 cup BBQ sauce
  • 2 tablespoons tomato paste
  • 2 teaspoons Italian seasoning
  • 1 lbs pulled pork (or chicken, cut into bite sized pieces)
  • 1 pound cooked spaghetti

Instructions

  • Heat the olive oil in large saucepan over medium heat. Add the onion and bell pepper, and cook stirring occasionally for 3-4 minutes or until soft. Add the minced garlic and cook stirring constantly for 1-2 more minutes. Sprinkle BBQ rub over and stir to combine well.
  • Add the tomato sauce, paste, Italian seasoning, diced tomatoes, BBQ Sauce, and pulled pork to the pan. Stir to combine, and the simmer for 20-30 minutes over low heat, stirring occasionally. You can use the time to cook your spaghetti as per the packet instructions.
  • Pour the sauce over the cooked pasta, and toss gently to combine. Drizzle with additional BBQ sauce if desired!

Recipe Notes

Switch up the pasta shape: While spaghetti is a real family classic and works with the sauce really well, practically any pasta shape would make a good substitution!
Picking your BBQ sauce: Choose a tangy barbecue sauce that will compliment the tomato sauce. Tomato sauce is naturally quite sweet, so a barbecue sauce that tastes too much of sugar will make the whole dish too sweet.
Raise the heat: Add some heat by using a spicy BBQ rub.

Recipe costs provided are approximate. Actual cost per recipe & serving will vary by location, store, brand, etc. Approximate cost shown does not include costs for any optional ingredients.
