Cowboy Meatloaf & Potato Casserole

This rich, hearty Cowboy Meatloaf & Potato Casserole uses simple shortcuts like prepared mashed potatoes and your favorite bbq sauce to get a cozy, comforting dinner on the table the whole family will love.

  • 9×9 inch baking dish

Ingredients

  • 1 pound lean ground beef (or turkey)
  • ½ cup finely chopped white onion
  • ½ cup bbq sauce (a chipotle one works nicely here, or a whiskey-spiked one!)
  • cup seasoned breadcrumbs
  • 1 large egg
  • 2 Tsp chili powder
  • 1 Tsp garlic powder
  • salt and pepper (to taste)

Mashed Potato Topping

  • 24 oz prepared mashed potatoes (1 pack)
  • 1 cup bacon bits (from approx. 6-8 slices)
  • 1 ½ cups shredded mexican cheese blend
  • green onions (thinly sliced, for topping)

Instructions

  • Preheat the oven to 375 degrees F.
  • In a mixing bowl, combine the ground beef, chopped onion, breadcrumbs, bbq sauce, egg, chili powder, garlic powder, and some salt and pepper. Mix together to combine completely.
  • Press the meat mixture into a 9×9 inch well-greased baking dish.
  • Bake for 20-25 minutes until the beef is cooked through. Drain off any extra fat.
  • Heat the mashed potatoes according to the package instructions.
  • Spread the cooked potatoes over the meatloaf mixture in the baking dish.
  • Top the potatoes with the shredded cheese and bacon pieces.
  • Place the oven on broil, and broil until the cheese is melted. Sprinkle with the green onions. Enjoy!

Recipe Notes

For a low carb version of this casserole, use mashed cauliflower instead!
