Ingredients
1poundlean ground beef(or turkey)
½cupfinely chopped white onion
½cupbbq sauce(a chipotle one works nicely here, or a whiskey-spiked one!)
⅓cupseasoned breadcrumbs
1large egg
2Tspchili powder
1Tspgarlic powder
salt and pepper(to taste)
Mashed Potato Topping
24ozprepared mashed potatoes(1 pack)
1cupbacon bits(from approx. 6-8 slices)
1 ½cupsshredded mexican cheese blend
green onions(thinly sliced, for topping)
Instructions
Preheat the oven to 375 degrees F.
In a mixing bowl, combine the ground beef, chopped onion, breadcrumbs, bbq sauce, egg, chili powder, garlic powder, and some salt and pepper. Mix together to combine completely.
Press the meat mixture into a 9×9 inch well-greased baking dish.
Bake for 20-25 minutes until the beef is cooked through. Drain off any extra fat.
Heat the mashed potatoes according to the package instructions.
Spread the cooked potatoes over the meatloaf mixture in the baking dish.
Top the potatoes with the shredded cheese and bacon pieces.
Place the oven on broil, and broil until the cheese is melted. Sprinkle with the green onions. Enjoy!
Recipe Notes
For a low carb version of this casserole, use mashed cauliflower instead!
