Meatloaf Casserole

This super cozy and comforting Meatloaf Casserole is perfect for feeding the whole family! Bbq beef is topped with creamy mashed potatoes before being topped with melty cheddar cheese and bacon bits.

Ingredients

  • 1 ½ lb lean ground beef (or turkey)
  • ½ cup white onion (finely chopped)
  • ½ cup bbq sauce
  • 1 tsp garlic powder
  • 1 cup seasoned breadcrumbs

Mashed Potato Topping

  • 2 lb potatoes (russet or yukon gold, peeled and cut into 1" chunks)
  • cup unsalted butter
  • ½ cup whole milk
  • 1 tsp salt
  • ¼ tsp ground black pepper
  • ¼ tsp garlic powder
  • ½ cup bacon bits (approximately 8 slices)
  • ½ cup cheddar cheese (shredded)

Instructions

  • Preheat the oven to 375 degrees F.
  • In a large bowl, gently combine the beef, bbq sauce, onion, garlic powder, breadcrumbs, milk, egg, salt and pepper then press into a 9x9 baking dish.
  • Bake uncovered for 15 minutes, then remove and drain any excess fat.
  • While the meatloaf is cooking add potatoes with just enough water to cover to a pot and bring to a boil on high heat. Cook for 15 minutes.
  • Drain the water and add the milk, butter, salt and pepper mashing it all together until creamy.
  • Spread over the meatloaf and top with cheese and bacon.
  • Bake for an additional 15 minutes, until the bacon is sizzling and cheese is bubbling and the mashed potatoes are slightly crispy.

Recipe Notes

Cooled leftovers will keep, covered in the refrigerator for up to 3 days and can be re-heated either in the dish using the oven (don't re-heat the casserole more than once) or in individual portions using the microwave.
