Rice & Gravy

This rich and comforting Rice & Gravy recipe is the perfect slow-cooked, cozy dinner to make tonight!

Ingredients

  • 2 lb round steak (or chuck roast, neck chops, 7-steak or short rib)
  • Cajun seasoning (to taste)
  • 4 tbsp butter
  • 2 tbsp avocado oil (or neutral oil, divided)
  • 1 cup yellow onion (diced)
  • 1 bell pepper (diced)
  • 1 celery stalk (diced)
  • 3 garlic cloves (minced)
  • 1 bay leaf
  • 4 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 2 tbsp cornstarch (optional)
  • 4 cups cooked rice
  • fresh parsley (chopped for garnish)

Instructions

  • Liberally season the meat with Cajun seasoning.
  • Heat 1 tbsp of oil in large skillet over a medium heat.
  • Add the steaks to the skillet. Brown the meat on both sides, about 4 minutes per side, and once brown, remove the meat and set aside.
  • Add the trinity (onion, bell pepper and celery), and sauté until soft. Add the garlic, and sauté a little more.
  • Now return the meat, and add the beef broth. Cook the steaks for approx. 1 1/2 hours, or until you can easily cut it with a fork.
  • Meanwhile, cook some rice.
  • If the sauce is not thick enough, make a cornstarch slurry: Whisk together 2-tbsp cornstarch with 1/4-cup cold water. Add half to the gravy and stir to incorporate. Let it simmer for a minute or two, and if it is still too thin, add the remaining slurry. Stir, simmer, and it should now be thick enough!
  • Scoop some rice on your plate and cover with meat and gravy. Top with parsley!
