5-Ingredient Taco Soup

So easy and full of so much flavor, this simple taco soup recipe makes dinner ridiculously easy, not to mention easy on your grocery bill.

Ingredients

For the 5-Ingredient Taco Soup

  • 1 pound lean ground beef (85/15; or ground chicken, turkey, or bison)
  • 1 ounce taco seasoning (approximately 3 tablespoons, store-bought or make your own)
  • 1 16-ounce jar chunky salsa
  • 4 ounces low-sodium beef broth
  • 1 10-ounce bag frozen corn

Serving Suggestions (All Optional)

  • sour cream
  • diced avocado
  • diced red onion
  • tortilla strips
  • chopped fresh cilantro

Instructions

  • Place large dutch oven on stovetop over medium-high heat. Add 1 pound lean ground beef and cook, stirring often, until beef is browned and crumbled, approximately 5 to 10 minutes.
  • Once ground beef is browned, add 1 ounce taco seasoning to pot. Stir until seasoning is fully incorporated into ground beef.
  • Add 1 16-ounce jar chunky salsa and 4 ounces low-sodium beef broth to pot. Stir to incorporate, then reduce heat under pot to medium-low. Simmer mixture 15 minutes, stirring occasionally.
  • Reduce heat under pot to low. Add 1 10-ounce bag frozen corn and stir to incorporate, then simmer soup 5 minutes or until corn is warmed through and tender.
  • Ladle prepared soup into serving bowls. Top soup with sour cream, diced avocado, diced red onion, tortilla strips, and/or chopped fresh cilantro as desired and serve warm.
