Place large dutch oven on stovetop over medium-high heat. Add 1 pound lean ground beef and cook, stirring often, until beef is browned and crumbled, approximately 5 to 10 minutes.
Once ground beef is browned, add 1 ounce taco seasoning to pot. Stir until seasoning is fully incorporated into ground beef.
Add 1 16-ounce jar chunky salsa and 4 ounces low-sodium beef broth to pot. Stir to incorporate, then reduce heat under pot to medium-low. Simmer mixture 15 minutes, stirring occasionally.
Reduce heat under pot to low. Add 1 10-ounce bag frozen corn and stir to incorporate, then simmer soup 5 minutes or until corn is warmed through and tender.
Ladle prepared soup into serving bowls. Top soup with sour cream, diced avocado, diced red onion, tortilla strips, and/or chopped fresh cilantro as desired and serve warm.
