Barbecue Spaghetti with Pulled Pork
Ingredients
- 2 tablespoons olive oil
- ½ small onion (chopped)
- 1 green bell pepper (chopped)
- 5 cloves garlic (minced)
- 3 tablespoons BBQ rub
- 14 ounce can diced tomatoes (undrained)
- 14 oz can tomato sauce
- 1 cup BBQ sauce
- 2 tablespoons tomato paste
- 2 teaspoons Italian seasoning
- 1 lbs pulled pork (or chicken, cut into bite sized pieces)
- 1 pound cooked spaghetti
Instructions
- Heat the olive oil in large saucepan over medium heat. Add the onion and bell pepper, and cook stirring occasionally for 3-4 minutes or until soft. Add the minced garlic and cook stirring constantly for 1-2 more minutes. Sprinkle BBQ rub over and stir to combine well.
- Add the tomato sauce, paste, Italian seasoning, diced tomatoes, BBQ Sauce, and pulled pork to the pan. Stir to combine, and the simmer for 20-30 minutes over low heat, stirring occasionally. You can use the time to cook your spaghetti as per the packet instructions.
- Pour the sauce over the cooked pasta, and toss gently to combine. Drizzle with additional BBQ sauce if desired!
