Chef’s Tips

  • The very best and most accurate way to gauge how “done” your steak is? A meat thermometer! Please, go by temp, not by looks.
  • It’s really important that you remove the flank steak from the air fryer before the internal temperature reaches the ideal temp for your preferred doneness. There’s a 10-minute rest after cooking. The steak will keep cooking during that rest time. If it’s cooked to your preferred temperature when that rest time starts, it’ll be overcooked by the time you actually slice and serve the steak.

Air Fryer Flank Steak

Equipment

  • 9×13 glass baking dish (with lid, or plastic wrap to cover)
  • refrigerator
  • air fryer
  • tongs
  • internal meat thermometer
  • cutting board
  • aluminum foil
  • sharp chef's knife

Ingredients

For the Marinade

  • ½ cup vegetable oil (or other neutral-flavored oil)
  • ½ cup soy sauce (low sodium if desired)
  • ¼ cup balsamic vinegar
  • 2 tablespoons lemon juice
  • 1 ½ tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 tablespoon minced garlic (approximately 2 large cloves)
  • freshly cracked black pepper

For the Flank Steak

  • 1 1.5-pound flank steak

Instructions
 

  • Add ½ cup vegetable oil, ½ cup soy sauce, ¼ cup balsamic vinegar, 2 tablespoons lemon juice, 1 ½ tablespoons Worcestershire sauce, 1 tablespoon Dijon mustard, 1 tablespoon minced garlic, and plenty of freshly cracked black pepper to medium mixing bowl. Whisk ingredients together until fully incorporated.
  • Place 1 1.5-pound flank steak in baking dish. Pour marinade over flank steak, then flip flank steak several times to coat all sides in marinade.
  • Cover baking dish with lid or plastic wrap. Place dish in refrigerator and chill 2 hours minimum, up to 12 hours maximum.
  • 30 minutes prior to cooking, remove baking dish from refrigerator. Set aside to stand at room temperature 30 minutes.
  • Preheat air fryer to 400° Fahrenheit.
  • Place marinated flank steak in preheated air fryer basket. Place basket in air fryer and air fry steak 6 minutes.
  • After 5 minutes, remove basket from air fryer. Flip flank steak over, then return basket to air fryer. Air fry steak 6 minutes more.
  • After 6 minutes, check internal temperature of flank steak with meat thermometer. If internal temperature has not reached desired target (see Notes below), return steak to air fryer. Cook 1 to 2 minutes more, then check internal temperature again.
  • When internal temperature of steak reaches desired target (see Notes below), transfer steak to cutting board. Loosely cover flank steak with aluminum foil, then allow steak to rest 10 minutes.
  • After 10 minutes, uncover steak and discard foil. Slice steak into strips, cutting against grain of meat. Serve as desired.

Notes

 

Internal Temperature Target for Flank Steak

  • Rare: Remove flank steak from air fryer when internal temperature reaches 115° Fahrenheit. Let steak rest 10 minutes. Serve at 120°-130° Fahrenheit.
  • Medium-Rare: Remove flank steak from air fryer when internal temperature reaches 120° Fahrenheit. Let steak rest 10 minutes. Serve at 130°-135° Fahrenheit.
  • Medium: Remove flank steak from air fryer when internal temperature reaches 125° Fahrenheit. Let steak rest 10 minutes. Serve at 135°-140° Fahrenheit.
  • Medium-Well: Remove flank steak from air fryer when internal temperature reaches 130° Fahrenheit. Let steak rest 10 minutes. Serve at 140°-145° Fahrenheit.
